Making the cut: Butcher shop opens on Marion Road

Get ready for a personalized experience when buying meat: a new butcher shop, and the only one of its kind in town, has opened on Marion Road.

Frank’s Butcher Shop, located on 260 Marion Road next to the Shirt Shack, carries all Boar’s Head’s products as well as fresh cut beef, poultry and pork.

Frank Tucker and his wife LuAnn began business plans in September. While Frank was working at Shaw’s as a meat cutter, things began falling into place when Ultimate Style Hair Salon vacated that location next to the Shirt Shack. As soon as they saw the space, they knew it would be perfect.

The interior was just what they needed: open and simple. They brought in refrigerated cases where meats are on display. The shop accepts deliveries several times a week and nothing will be frozen just yet.

“We’ll carry all the basics and everything will be nice and fresh,” he said.

The duo had a soft opening on Sunday, to gage the interests of their customers.

Tucker said a steady stream of customers came in to check out the shop.

Customers can walk in and pick out what they want, whether that’s just one chicken breast or a specific cut of steak. Frank will also be there to offer advice on how to cook meats.

“It’s almost like a thing of the past...you can’t go in and you can’t ask for steak cut a certain way or a special cut of anything,” said Tucker. “This was just an opportunity for us to get back to the way things were done years ago.”

Tucker began in the industry as a kid working in his aunt’s and uncle’s shop. He wasn’t old enough to handle the machinery, but began by washing pots and pans. He learned by watching the butchers in the shop, and by the time he was 16 and old enough to handle the machines, he knew all the different cuts.

He was butcher-in-chief at Lloyd’s Market in Rochester for 13 years, where he gathered a following of customers who have visited him at his new location already. But Tucker won’t call them customers.

“I’ve made a lot of friends,” he said, “I just wanted to continue that and give the personal service that people deserve. They don’t get that in the supermarkets.”

Frank’s Butcher Shop is open Monday through Saturday from 9 a.m. to 6 p.m. and Sunday from 9 a.m. to 5 p.m.
